Our raw food quality cocoa beans are cultivated by the responsible people of Cooperativa Cabruca in harmony with the original forests of Itacaré, Brazil, where cocoa has been harvested for over 200 years. Their habitat is the 7% of the remaining protected rainforest on the Atlantic coast. They work towards the preservation of their habitat and the wise culture of preserving their environment over generations.

We decided to bring Cabruca's fine flavor cocoa to the world because we want to carry their mission and intention to bring you the best organic cocoa you can harvest. Hand-picked and produced with passion and love.

How is our cocoa produced?

In constant and direct contact with our partners, we combine ancient wisdom with modern knowledge of cocoa and chocolate production. The fruit is only harvested when it is optimally ripe and brought to nearby certified farmers for fermentation and sun-drying. This essential part of the work enables the so-called alkalization of the natural treasure and activates beneficial components from the inside out.

The seeds ferment for 6-7 days and dry in the sun for 3-4 days. They are then cleaned naturally. Once dried, the beans can also be crushed into nibs. We extract the precious liquor from the nibs using a granite mill.

Does cocoa liquor contain alcohol?

No, it does not. The name correlates to the fact that the beans become liquid (i.e. viscous) during the process in the granite mill.

What makes our cocoa so special?

There is a significant difference between commercial cocoa (and the chocolate made from it) and what we sell and use at LEWEL UP. This has to do with the huge differences in variety, selection, fermentation, roasting and processing that affect the amount of beneficial compounds in the cocoa.

At LEWEL UP, we offer the finest organic certified Brazilian cocoa we can find. The varying conditions and microclimates in different regions of Itacaré, Brazil, have created hundreds of distinctly different flavor profiles. Just as with wine, many regions produce different results from season to season, depending on the variety and climate.

Our very passionate partners at Cabruca spend the whole year roasting and testing cocoa from many different regions in the jungle. They expertly test different roasting temperatures, times and grinds from the best and strongest harvests of the season and taste the top results. They then select and send us the finest of the best cocoas of the year as well as the roast, resulting in the best of the best.

In contrast, some other traders buy cheap cocoa from local impoverished private sources and simply sell it on. We are constantly striving to form close partnerships with ALL of our producers and guarantee more than just fair trade. Natural cocoa tea raw food quality

Boil vitalizing cocoa shells (rich in magnesium, fibre and potassium) at least three times on your own stove or over a fire with friends - with the fruity sweet taste of the forest!

Consumption recommendation:
Add a heaped teaspoon of cocoa shells to a cup of your choice and pour hot water over it (with or without tea bags).
Wait 2-7 minutes until all the shells have settled. The longer the better and stronger!
Our tea is also delicious with almond or coconut milk (as you can imagine).
